Since 2016, La Clairière has been chef Shibata’s stage which connects guests with farmers from Japan and abroad and showcase his produce-driven French cuisine with a dash of Japanese sensibility that faithfully interpret flavors of the seasons. Chef Shibata visits every farmer and purveyor he works with in Japan and crafts a collection of delicate dishes that are ingredient-driven and amplify the uniqueness and story of each ingredient. For two nights only, l'abeille welcomes chef Florent Pietravalle from the historic Provencal city of Avignon. Chef Florent is the head chef of La Mirande - a five star boutique hotel at the foot of the Pope's Palace - and holds one Michelin star and the coveted green star for his commitment to sustainable cuisine. Florent Pietravalle, 36, from Montpellier, became head chef at La Mirande after spending four years in Pierre Gagnaire's kitchen in Paris and has also trained with other masters globally. Chef Florent's cuisine is delicate, modern, and utilizes the abundant local products available in beautiful Provence. In addition to receiving Michelin Guide recognition, under Chef Florent's leadership, La Mirande has been named by La Liste as "Best Restaurant in the World - New Talent of the Year in 2022" and received 4 toques (17/20) from Gault & Millau.
