A true legend from Brittany, Chef Banctel was born in Rennes built his craft with Bernard Pacaud at the three-star L’Ambroisie, before becoming executive chef for Alain Senderens, where he embraced a bold new way of thinking: creating dishes in dialogue with wine.

In 2015, he took the helm of Le Gabriel at the Parisian “Palace” hotel - La Réserve,. The Michelin Guide awarded him two stars straight away – a rare recognition of talent and precision. In March 2024, he achieved the ultimate gastronomic achievement: three Michelin stars.

His cuisine reflects both his roots and his travels: the rigor of Brittany, the finesse of Japan, inspirations from Turkey, making his own a centuries-old technique: lime-stone cooking. Today, he pushes flavors to their limits – concentrated, precise, expressive – crafting plates that are both striking and intelligent.

Chef Banctel is also a proud ambassador of Cos d'Estournel, the prestigious second-growth estate in Saint-Estèphe.
