Chef Jérôme Banctel brings the three Michelin-starred artistry of Le Gabriel to New York

For ONE night only, l’abeille welcomes Jérôme Banctel, the three-Michelin-starred master of Le Gabriel at La Réserve Paris.

A true legend from Brittany, Chef Banctel was born in Rennes and raised in Piré-sur-Seiche. Chef Banctel built his craft with Bernard Pacaud at the three-star L’Ambroisie, before becoming executive chef for Alain Senderens, where he embraced a bold new way of thinking: creating dishes in dialogue with wine.

In 2015, he took the helm of Le Gabriel at the Parisian “Palace” hotel - La Réserve, entrusted by Michel Reybier. One year later, the Michelin Guide awarded him two stars straight away – a rare recognition of talent and precision. In March 2024, he achieved the ultimate gastronomic achievement: three Michelin stars.

His cuisine reflects both his roots and his travels: the rigor of Brittany, the finesse of Japan, inspirations from Turkey, making his own a centuries-old technique: lime-stone cooking. Today, he pushes flavors to their limits – concentrated, precise, expressive – crafting plates that are both striking and intelligent.

Discreet yet determined, Jérôme Banctel is one of the great contemporary voices of French gastronomy.

In addition to heading Le Gabriel, Chef Jérôme Banctel is also the ambassador of Cos d’Estournel, the prestigious second growth estate located in Saint-Estèphe also owned by Michel Reybier. 

For this special evening, an optional wine pairing will be available featuring some the celebrated Cos d’Estournel wines, namely the Cos d’Estournel Blanc 2008 and Cos d’Estournel 2005, as well as the 2010 vintage of Tokaj Hétszőlő, one of the top estates for Tokaj wines in Hungary.
