l’abeille welcomes husband-and-wife team Chris and Kathryn Hermann, the founder of one of Oregon’s most coveted cult producers for an intimate evening devoted to the singular world of 00 Wines.
Described by Decanter’s Charles Curtis MW as “reminding many of the wines of Coche-Dury,” 00 Wines stands at the intersection of Burgundy’s most revered traditions and the expressive terroir of Oregon’s Willamette Valley. Founded by husband-and-wife team Chris and Kathryn Hermann, the domaine is celebrated for its radical, old-world approach to Chardonnay—an esoteric Burgundian method known as “Black Chardonnay,” in which the grape is treated more like a red wine. The result: extraordinary texture, depth, and aromatic complexity, with each bottle revealing its vineyard and vintage with crystalline clarity.
Working with legendary sites such as Seven Springs, Shea, Hyland, and Chehalem Mountain, the Hermanns also produce microscopic quantities from Grand Cru and Premier Cru vineyards in Burgundy and Champagne, applying the same philosophy across continents.
Chris and Kathryn will join us in person for this rare 14-guest dinner, guiding you through their wines alongside a multi-course tasting menu by Chef Mitsunobu Nagae—crafted to echo the precision, nuance, and quiet power of these remarkable bottles.
An evening for collectors, Burgundy lovers, and those drawn to the poetry of terroir. Champagne reception starts at 7pm! Seats are extremely limited.
Wines for the Evening
VGW: The flagship Williamette Valley Chardonnay blend that showcases the imprint of the vintage. Sourced from historic acclaimed vineyards in the four corners of the valley including Seven Springs, Eola-Amity, and Chehelem. 2022 & 2023 vintages will be poured for this evening.
VGR: Grape Clusters are destemmed by hand. The whole berries are then placed in 500L terra cotta amphorae from Tuscany. Sourced from Chehelem, Eola-Amity, Hyland, and Shea. 2022 & 2023 vintages will be poured for this evening.
Chehelem: Sourced from chardonnay grown with biodynamic methods, the Chehalem Mountain Vineyard faces Ribbon Ridge to the east. Flavors reminiscent of Puligny-Montrachet! 2023 vintage will be poured for this evening.
Burgundies: Since that inaugural vintage, the Burgundy project has expanded thoughtfully to include some of the region’s most revered terroirs, including Meursault Charmes, Bâtard-Montrachet, and Chambertin. These wines are extremely limited & offered to the market only in the best years! Meursault 1er Cru Charmes 2023 & Pommard 1er Cru 2023 vintage will be poured for this evening.
Chris Hermann
Chris’s connection to wine was rooted in his upbringing in the Willamette Valley. As a second-generation Oregonian, he spent his youth absorbing both the rhythms of the land and the early evolution of Oregon winemaking. Although he built a successful career as a wine industry lawyer, writing The Law of Wine, Chris always felt drawn back to hands-n winemaking.
Kathryn Hermann
Kathryn Hermann began her professional journey in the fast-paced world of technology, gaining hands-on experience in product development, marketing and software for high-tech startups. Today, as General Director, she oversees the full scope of operations, from day-to-day business management to creative direction, brand storytelling, packaging design and global market strategy.
